Can I use metal spoons in a non-stick pan?

No. One scratch starts the coating breaking down. Wood or silicone only.

Why does everything stick to stainless steel?

Usually the pan was not hot enough before the oil went in. Heat the empty pan first, add oil, wait until it shimmers, then add food — it releases on its own once a crust forms.
